    Greek Isle Layered Salad

    1 - 10 oz. Bag Salad Greens - Mediterranean Mix or your favorite
    2 Cups Halved Cherry or grape tomatoes or chopped tomatoes
    1 Cup Cucumber, chopped
    1 Cup Bell Pepper - any color, chopped
    1-2 Cups Cooked Shrimp, shelled and deveined
    ½ Cup Kalamata Olives, pitted and halved
    ½ Cup Feta cheese, crumbled
    ½ Cup Red Onion, slivered
    ¼ Cup Pepperoncinis, sliced
    ½ Cup Pita chips, broken

    Recipe



    Using a large, rectangular, oval or round platter, arrange all ingredients in rows. Drizzle vinaigrette over right before serving.

    Greek Vinaigrette


    ¼ Cup Fresh Lemon Juice
    ¼ Cup Extra Virgin Olive Oil
    2 Cloves Garlic, minced
    1 Tsp. Fresh Oregano, minced
    1 Tsp. Fresh mint, minced
    ¼ Tsp. Crushed Red Pepper Flakes
    1 Tsp. Greek Seasoning
    Salt and Pepper to taste
    Mix all ingredients together and refrigerate until serving time. Pour over salad right before serving.
