    1 pound green beans
    1½ teaspoons salt
    1 medium-sized shallot (3 to 4 tablespoons minced)
    3 tablespoons olive oil
    1 tablespoon red wine vinegar, or any vinegar
    2 teaspoons grainy European-style mustard
    ½ teaspoon (freshly ground) black pepper

    Recipe



    Bring a large pot of water to a boil with 1 teaspoon salt.

    Trim beans and cut them into 1-inch pieces. Plunge them into boiling water, and cook 5 minutes or until tender but still firm and bright green. Drain, run under cold water and spread on absorbent toweling.

    Mince the shallot, and put it in a medium-sized serving bowl. Add olive oil, vinegar, mustard, ½ teaspoon salt and pepper, and blend with a fork until salt is dissolved. Add beans, and stir to coat them all over with dressing. Chill or serve immediately.

    Serves 4.
