Lime Marinated Chicken

6 whole boneless chicken breasts, skin removed
3 to 4 cups chicken broth
1/2 cup fresh lime juice
2 Tablespoons red wine vinegar
2 Tablespoons vegetable oil
2 teaspoons salt
1 Tablespoon sugar
2 Tablespoons minced garlic
1/2 cup finely chopped cilantro
1/2 cup finely chopped red onioin
2 small tomatoes, peeled, seeded and finely chopped
2 to 3 hot chile peppers, finely chopped
Bibb lettuce
Cherry tomatoes, avocado and cilantro for garnish
Recipe
Poach chicken breasts in enough broth to cover for 10 to 12 minutes or until just done; do not overcook. Cool chicken, reserve 1 1/2 cups broth and cut chicken into 1/2 to 1 inch cubes.
Mix reserved broth with lime juice, vinegar, oil, salt, sugar, garlic, cilantro, onion, tomatoes and chile peppers. Add chiekcn and marinate, refrigerated, for at least 4 hours or overnight if possible.
Line plates with bibb lettuce. Top with chicken and garnish with cherry tomatoes, avocado and cilantro leaves. Serves 6.
