    1 small head green cabbage
    1 carrot, shredded
    1 cup chopped red or yellow bell pepper
    1/2 cup sliced radishes
    2 green onions, thinly sliced

    For the Dressing
    1/4 cup orange juice
    1 tablespoon fresh lime juice
    2 tablespoons chopped peanuts
    2 tablespoons sugar
    1 tablespoon chopped fresh cilantro or parsley
    1/2 teaspoon salt
    1 cup sour cream





    Recipe



    1. Cut cabbage into quarters; remove solid core from each quarter. Lay quarters Cut sides down on a work surface. With a sharp knife, Cut cabbage into very thin slices.


    2. In a large bowl, combine cabbage, carrot, bell pepper, radishes and green onions. Toss to mix well.


    3. For the dressing, in a medium bowl, whisk together orange juice, lime juice, peanuts, sugar, cilantro and salt. Whisk in sour cream until smooth. Pour dressing over vegetables; mix well. Serve immediately or cover and chill for up to 8 hours.
