    For the cream cheese:

    1# cream cheese
    1 tablespoon fresh chives, chopped
    1 tablespoon fresh dill, chopped
    2 tablespoons lemon juice
    salt and pepper to taste
    In a mixer, whip the cream cheese with all of the ingredients. Season to taste with salt and pepper.

    For the sandwich:

    12 slices pumpernickel or dark rye bread
    12 ounces smoked salmon
    4 ounces cucumbers, sliced thin
    4 ounces red onion, sliced thin
    1 cup rice wine vinegar
    2 tablespoons sugar

    Recipe



    Marinate the onions in the vinegar and sugar for at least 15 minutes. Take one slice of bread and top with 1 ounce of the cucumbers. Top with another piece of bread. Spread the top of that with 2 ounces of the cream cheese. Top with 3 ounces of salmon. Pat the onions dry and place 1 ounces of onion on the salmon. Spread the inside of the top piece of bread with 2 ounces cream cheese. Prick with toothpicks and slice in half. Repeat with the remaining ingredients.
