Momma Bear's Pasta Sauce

List of Ingredients
2 tbls extra-virgin olive oil
4 cloves garlic, crushed
1 bay leaf
3 thick (1/4 inch) slices of pancetta, chopped into small bits
1/2 lb Italian Sausage
1 lb lean ground beef
1 medium carrot, peeled and finely chopped
1 or 2 stalks of celery, chopped
1 medium onion, chopped
1 cup red wine
1 cup beef stock (canned)
2 (32 ounce) cans crushed tomatoes (I use 1 can with Italian Seasoning and 1 plain)
1 can stewed tomatoes (crushed by hand)
a handful of chopped flat leaf parsley (fresh if available)
1/4 tsp of allspice or cinnamon (I prefer allspice)
Coarse salt and pepper
Small amount of crushed red pepper
Recipe
In a deep pot saute in olive oil, garlic, bay and pancetta bits and brown for about a minute. Add Italian Sausage and Ground Beef and continue to brown the meat. Add the chopped vegetables to the meat and continue to cook for about 5 minutes or until onions are translucent. Add wine, stock and tomatoes to the pot. Stir in the parsley and the seasonings and let simmer.
Once my meat is sauted put all of the ingredients in my large crockpot and let the sauce simmer until ready to serve.
