    Bernice's Concord Wisconsin Cheese Soup

    4 cups chicken broth
    6 tablespoons diced onion
    1/2 diced green bell pepper
    1/2 diced red bell pepper
    1/4 teaspoon white pepper
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    24 ounces process cheese spread in a jar
    Flour to thicken (about 1/2 cup)
    1/2 cup half-and-half cream

    Recipe



    In large pot, combine chicken broth, onion, bell peppers and seasonings. Bring to a boil and cook until vegetables are tender, about 8 to 10 minutes. Add cheese and thicken with flour. Mixture should be the consistency of gravy. Reduce heat to low and add half-and-half cream. Continue to cook over medium heat, stirring frequently, until soup comes to 165 degrees. Serve immediately. Makes 8 servings.
