    Mission Inn Cream of Mushroom Soup

    List of Ingredients




    1 pound sliced Dutch mushrooms
    Butter or oil for sautéing mushrooms
    1 quart beef broth
    1 pint heavy cream
    2 ounces brandy
    1/2 to 1 tablespoon cornstarch
    Salt and freshly ground pepper taste

    Recipe



    1. In a pot, sauté mushrooms until lightly browned. Add beef broth and brandy.

    2. Simmer 30 minutes, stirring occasionally. Mix cornstarch with 1/4 cup of the hot liquid broth mixture. Pour back into the pan and thicken soup to desired consistency.

    3. Add salt and pepper to taste.
