    List of Ingredients




    1 dry chipotle chile
    1 cup chopped tomato
    1/2 pound chicken breast, cut in 3/4" pieces
    5 cups chicken broth
    1 TBS chili powder
    1/4 cup chopped cilantro
    1/2 bunch cilantro
    1 cup corn
    2 minced garlic cloves
    1/4 cup lime juice
    1 chopped onion
    sour cream
    baked tortilla strips*

    Directions
    Heat broth over high heat with onion, chili powder, tomatoes, and chipolte.
    Wrap cilantro in a bunch tightly and add to heating soup.
    Once mixture boils, reduce heat and simmer 15 minutes.
    Add chicken and simmer an additional 10 minutes or until chicken is cooked through.
    Remove and discard cilantro.
    Add corn and cook for 2-3 minutes
    Remove from heat
    Stir in chopped cilantro and lime juice.
    Garnish each bowl with sour cream and tortilla strips.

    *Slice tortilla into one inch strips, spray with veggie oil spray and bake in 250 degrees until crispy.
