Greek Celery Dressing

1/4 pound feta cheese
1 large stalk celery, coarsely chopped
5 ounces (about 5/8 cup) red wine vinegar
1 tablespoon minced garlic 1/2 teaspoon ground dried oregano
1 teaspoon kosher salt
Ground white pepper, to taste
3/4 cup canola oil
1/4 cup extra-virgin olive oil
Recipe
Combine feta cheese, celery, vinegar, garlic, oregano, salt, and pepper in a blender. Blend until all ingredients are well combined. Use a spatula to push down any ingredients that have not been incorporated. Remove the center of the lid, turn blender on, and begin adding the oil in a slow, steady stream. Blend until all of the oil is thoroughly incorporated and the dressing is smooth and emulsified. Cover and refrigerate until serving time.
