    4 pounds pork butt
    1 tablespoon kosher or canning salt
    3 tablespoons fennel seed
    3/4 cup grated locatelli or Romano cheese
    4 cloves chopped garlic
    Freshly ground black pepper
    Hot red pepper flakes (optional)
    Sausage casing, about 4 feet (sold in meat department of grocery stores)

    Soak sausage casings in cold water. Meanwhile, coarsely grind pork butt (or have butcher do it ahead of time). Add all ingredients except casings to ground pork butt. Mix well with hands. Drain sausage casings. Stuff pork mixture into casings.

    Mixture may also be left loose for use in sauce or as patties.

    Makes 4 pounds.
