    2 Pkg. Frozen Spinach - Leaf or Chopped (I use chopped)
    4 Tbsp. Butter
    1 Medium Onion, Chopped
    1 Tbsp. Flour
    1/2 Cup Evaporated Milk
    1/2 Cup Vegetable Liquid
    1/2 Tsp. Pepper
    3/4 Tsp. Beau Monde Seasoning
    1/2 Tsp. Garlic Powder
    1/2 Tsp. Salt
    1 Tbsp. Worchestershire Sauce
    Red Pepper to Taste
    1 - 6 oz. Roll Jalapeno Cheese
    3/4 Cup Buttered Bread Crumbs

    Cook spinach according to package directions.
    Drain and reserve liquid.
    Melt butter in saucepan over low heat.
    Saute onions until soft, then remove from pan.
    Stir in flour and mix until blended and smooth, but not brown.
    Slowly add liquids, stirring constantly; cook until smooth and thick over low heat.
    Blend in seasonings and onions, stirring until melted.
    Add spinach; pour into casserole dish. Top with crumbs.
    Bake at 350 degrees until bubbly around edges - 15 to 20 minutes.
    Serves 5-6 people.
    NOTE: Buttering the casserole might make cleanup easier and that "serves 5-6" means pretty small servings.
