    BBQ Smoked Wings

    Source of Recipe

    Trailhead Brewing Co.

    List of Ingredients

1 tablespoon dry sweet rub for meats
1 1/4 pounds chicken drumettes (about 12 pieces)
    Vegetable oil, for frying
1/4 cup Trailhead Wing Sauce (see recipe)

    Recipe

Sprinkle seasoning rub onto drumettes. Smoke, preferably over hickory, until internal temperature reaches 165 degrees.

Deep-fry or pan-fry the smoked drumettes until the outside is crispy; drain well on paper towels. Place drumettes in a plastic bowl with a tight-fitting lid; add Wing Sauce, cover and shake until pieces are coated. Serve immediately.

    Trailhead Wing Sauce
    Yield: about 2/3 cup.

    3/4 cup (1 1/2 sticks) butter
1/4 cup Trailhead Barbecue Sauce (see note)
1/2 cup hot pepper sauce (Trailhead uses Frank's "Hotter" Red Hot)
1 tablespoon ground red (cayenne) pepper
    3/4 teaspoon ground white pepper
    3/4 teaspoon ground black pepper
    1 1/2 teaspoons onion powder
    1 1/2 teaspoons garlic powder

Melt butter; gradually mix in barbecue sauce, hot sauce, ground peppers, onion powder and garlic powder. Stir to blend well.

Note: Trailhead Brewery makes its barbecue sauce by blending 1 part honey with 4 parts barbecue sauce
