    2 pounds chicken wings, tips discarded
    4 cups safflower oil
    1 tablespoon minced garlic
    1/2 cup minced onion
    1/2 cup jalapeno pepper, seeded and minced
    1/4 cup green pepper, minced
    2 tablespoons Italian parsley, chopped
    1 tablespoon bacon drippings
    1 cup ketchup
    1/2 cup cider vinegar
    2 tablespoons sugar
    2 tablespoons Tabasco sauce
    1 tablespoon Worcestershire sauce
    1/2 teaspoon liquid smoke
    1/2 teaspoon black pepper
    1/4 teaspoon dried oregano
    1/4 teaspoon crushed red pepper
    1/4 teaspoon dried sweet basil

    Sauté garlic, onion, jalapeno, green pepper and parsley in bacon drippings until onion is soft. Add all remaining ingredients except the oil and chicken wings. Bring to a boil and simmer over low heat for 15 minutes. Bring oil to 350 degrees and deep fry the wings in small batches for 5 minutes. Drain and place wings in an ovenproof dish. Cover with the sauce and bake for 15 minutes at 350. Serve with blue cheese dressing and plenty of napkins.
