Kansas City Cookout
Barbecue "N" Beans: The bean mixture includes Navy, Lima, Kidney and Pinto Beans.
List of Ingredients
- 2 cups chopped onions
- 1/4 cup molasses
- 3/4 cup zesty barbecue sauce
- 1/2 cup light brown sugar
- 1/3 cup thick ketchup
- 1 tblespoon worcestershire sauce
- small amount of Tabasco sauce
- Spices: (can include among many)
- dried red and green peppers
- salt
- garlic powder
- black pepper
- cayenne pepper
- Optional:4-6 strips of Hickory smoked bacon(pork or turkey)
- And finally 4 cups of water
Instructions
- Sort thru and thoroughly wash beans. Soak beans for four hours or overnight in water to cover by 2 inches.
- Drain and rinse the beans. Place beans in a medium heavy pot along with the 4 cups of water. Bring to a boil. Lower heat to medium low and cook covered for an hour and 10 minutes.
- If you are including the bacon, ten minutes before beans are finished cooking, fry bacon as directed. Place on paper towel to dry. Chop fine and place in a large mixing bowl along with the remaining ingredients. Pre-heat oven to 300 degrees.
- Remove cooked beans from heat. Pour the beans(liquid included) into the sauce mixture and gently but thoroughly stir to blend. Place mixture in a 6-8 qt. casserole dish(I used a bean pot). Cover and bake on middle rack of your oven for at least 4 hours. After the first 2 hours check hourly to add water if necessary. For thicker beans, cook 1/2 hour extra.
