"Paddy’s Irish Soda Bread"
List of Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups raisins
1 tsp. baking soda
1 tsp. double acting baking powder
1 tsp. salt
2 tsp. whole caraway seed
1/3 cup granulated sugar
1 stick (1/2 cup) butter
1 cup buttermilk
Recipe
In a small bowl, pour boiling water over raisins and let stand for 5 minutes. In large bowl, sift together dry ingredients. Cut in butter until mixture looks like coarse crumbs. Drain raisins, stir into flour mixture. Add buttermilk all at once. Stir with fork until incorporated.
Do not over mix, or finished bread will have a tough texture. Turn onto floured surface and shape into a loaf.
Place into a greased 8" pie plate for round loaf, or a greased 4x8 inch loaf pan for a sandwich loaf.
Brush tops with mixture of 1 part egg and 1 part water.
Cut a slit 1/2 inch deep down center of loaf (for round loaf make 2 slits to form an X).
Bake 15 minutes at 400 degrees, lower heat to 375 degrees and bake at additional 30 minutes, or until knife comes out clean
Remove from pan and cool one hour.
Cut into wedges or slices
