    APPLESAUSE COFFEE CAKE

    List of Ingredients




    1 3/4 cups all-purpose flour
    1/2 cup sugar
    1/2 cup butter/margarine
    2 eggs (beaten)
    1 tsp. Vanilla
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1 cup chunky applesauce
    1/4 cup chopped walnuts
    1/2 tsp. ground cinnamon

    Recipe



    Stir together 3/4 cup of the flour and the sugar; cut in butter till crumbly. Set aside 1/2 cup of the crumb mixture for topping. To remaining crumb mixture, add eggs and vanilla; beat by hand until smooth.

    Stir together remaining 1 cup flour, the baking powder, soda and 1/2 tsp. salt. Add dry ingredients and applesauce alternately to the beaten mixture, stirring after each addition. (I just put everything into my mixer)

    Turn into a greased 8x8x2 pan. Stir nuts and cinnamon into reserved crumb mixture. Sprinkle on top. Bake at 375 for 30 minutes or until done.

    NOTE: I usually make double the crumb recipe by mixing together and additional 1/2 cup flour, 1/4 cup sugar and 1/2 stick of butter. You can also double the recipe and cook in a 9x13 pan.
