    List of Ingredients




    1 cup milk
    1/4 cup sugar
    3/4 tsp. salt
    1/2 tsp nutmeg (optional)
    1 pkg. active dry yeast
    2 Tblsp. lukewarm water
    2 Tblsp oil
    1 egg
    3 1/2 cups flour
    confectioner’s sugar



    Recipe



    * Scald the milk, add the granulated sugar, salt and nutmeg. Cool to lukewarm.


    Sprinkle the yeast into warm water and stir until the yeast is dissolved. Add oil, egg and dissolved yeast to the milk mixture and blend with a spoon. Add the flour gradually and beat well. Dough will be very soft. Cover with a towel and let it rise in a warm place until it doubles in size (about 1 hour). Knead the dough gently on a floured surface. Roll out to 1/4” thickness in a 12 x 18 rectangle. Cut into 36 (2”x3”) rectangles. Cover and let rise for about 45 minutes.

    Fry the beignets in deep fat (375°) until golden brown. Drain on paper towels and dust with confectioners’ sugar.

    Serve warm - delicious with café au lait
