    2 cups All-purpose Flour
    3 tsp. Baking Powder
    1/2 tsp. Salt
    1/2 cup Granulated Sugar
    1 large Egg, beaten
    3/4 cup Milk
    1/4 cup Vegetable Oil
    1 cup Fruit Jam or Jelly, any flavor

    Recipe



    Pre-heat oven to 400-F degrees and lightly oil two large muffin tins with non-stick cooking spray.

    In a large bowl, sift together the flour, baking powder, salt and sugar. Create a well in the center of the dry ingredients.

    In a small bowl blend together the egg, milk, and oil. Pour the wet ingredients into the well made in the dry ingredients and mix lightly.

    Gently stir in the fruit jam or jelly of your choice. Do not over mix, the batter may be a bit lumpy.

    Fill each well in the prepared muffin tins about two-thirds full. Bake for 25 minutes, or until golden.

    Remove the muffins from the oven to cool on a wire rack. Let stand about 15 minutes before removing the muffins from the tins to completely cool. Serve warm or store in an airtight container for up to 5 days.
