    Stuffed French Toast

    List of Ingredients




    3 oz. pkg. of softened cream cheese
    1/2 c. freshly chopped peaches
    2 tbsp. chopped pecans
    1 tbsp. honey
    2 eggs
    1/2 c. half and half
    1/4 tsp. vanilla
    6-8 large slices French bread, cut diagonally

    Recipe



    In a small bowl, beat cream cheese until light and fluffy. Add peaches, pecans and honey; blend well. Cut a pocket in the top rounded edge of each 1 1/2 inch wide slice of French bread. Carefully fill each slice with 1 1/2 tbsp. of the cheese mixture. Heat large skillet or griddle to 350 degrees. Slightly beat eggs. Add half & half and vanilla; mix well.

    Lightly grease heated skillet. Being careful not to squeeze filled bread slices, dip in egg mixture, turning to coat both sides. Cook in skillet over medium heat about 3-4 minutes on each side. If desired, butter completed toast and sprinkle with powdered sugar.


    (Note: Any in-season fruit can be substituted for the peaches, e.g. apples, apricots, blueberries, strawberries, pears, etc.)
