Yeast Donuts
List of Ingredients
1/2 c milk
1/3 c sugar
1tsp salt
1/2 c butter
2pkgs active yeast
1/2 c warm water
3 eggs 3 3/4 c flour(plain) Recipe
Heat milk until it bubbles, add sugar and butter. Mix yeast w/ warm water let sit for 5 min. Add to milk mixture; add eggs and 1/2 of flour mix well. Keep adding remaining flour till reaches a moldable consistency (should be soft but not too wet) Place in well-greased bowl and cover to let rise app 2-3 hrs till double in size. Remove from bowl and roll out on cutting or pastry board. Cut into circles w/ biscuit cutter or glass.
For the HOLES I usually find a plastic soda lid (from 2 liter) is the perfect size. If you are going to make filled doughnuts do not add holes. After cutting put on cookie sheets and cover to let rise again app 2 hrs or until double. Heat oil in deep pan (not sure of temp but I heat on medium high same temp as for french fries). Fry donuts on each side app only 5 minutes total. Watch closely they cook very fast. Drain on paper towels.
FOR GLAZE; mix 1 c powdered sugar w/ 1/4 c milk heat on low till blended dip doughnuts one at time....
FOR FILLED after cooking with a pastry tube (like for cake decorating) fill doughnuts with your choice of vanilla pudding, warmed jelly or preserves, whipped creme etc. use van pudding and then spread top w/ chocolate frosting for a Boston Creme variety. Experiment its fun!!
