Recipe Introduction
Every bonbon has a surprise center of caramel candy inside. Yum!
List of Ingredients
1 1/4 cups all-purpose flour
1/3 cup unblanched almonds, finely chopped
1/4 teaspoon salt
1/2 cup (1 stick) butter, at room temperature
1/3 cup granulated sugar
1 egg yolk
1/2 teaspoon vanilla
1/2 teaspoon almond extract
5 small caramel candies
1 egg white, lightly beaten
Coarse red decorating sugar crystals
Recipe
1. Heat oven to 350°. Lightly grease large baking sheet.
2. Stir together flour, almonds and salt in a small bowl.
3. Beat together butter, sugar, egg yolk, vanilla and almond extract in medium-size bowl until creamy and smooth, about 2 minutes. Stir in flour mixture.
4. Divide the dough into 20 equal balls. Cut the caramels into quarters. In palm of hand, flatten one ball of dough into 2-inch round. Press piece of caramel into center of dough and securely pinch closed. Reshape into ball and place on lightly greased baking sheet. Repeat with remaining dough and caramel pieces, spacing bonbons 2 inches apart.
5. Brush tops of balls with egg white; sprinkle with sugar cyrstals. Bake in 350° oven for 12 to 14 minutes or until lightly colored. Do not overbake. Transfer to wire rack to cool. Store in airtight containers at room temperature.
