    Butternut Squash Bisque

    Mirror Lake Inn Resort and Spa in Lake Placid, New York.

    List of Ingredients




    1 gal. chicken stock
    2 lbs. butternut squash, peeled and seeded
    3 stalks celery, diced
    3 carrots, diced
    1 large onion, diced
    2 garlic cloves, chopped
    6 apples, peeled and diced
    1 c. brown sugar
    3 tbsp. olive oil
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/8 tsp. cloves
    salt and pepper to taste.

    Saute all vegetables in olive oil. Next, roast apples in the oven until they start to brown. Combine apples with vegetables and stock. Let simmer until all vegetables are very soft. Then add brown sugar and spices, and salt and pepper to taste. Finally, puree either in the blender or with a stick blender. Enjoy!
