4 russet potatoes, chopped
2 c cottage cheese*
1/2 c plain yogurt
3/4 c yellow onion, minced
1 red bell pepper, chopped
1 tsp salt
1 tsp pepper
1/4 c butter, cut into small pieces
green onion, chopped, for garnish
(* use low-fat if desired)
Recipe
Directions:
Preheat oven to 350 degrees. Spray casserole dish with cooking spray. Peel and chop potatoes into bite-sized pieces and boil in hot water until tender. Drain well and add other ingredients expect butter. Mix well and place in casserole dish. Dot top of mixture with pieces of butter. Bake for 20-30 minutes. Garnish with green onion.
