    Chicken Jambalaya

    List of Ingredients




    1 cups onion, chopped
    1 cup bell pepper, chopped
    4 cups celery, chopped
    14-oz. can tomato puree
    2-4 cups vegetable broth or chicken stock
    4 boneless, skinless chicken breasts, cooked and chopped
    Cajun seasoning to taste (about 1 tsp.)
    1 - 1 1/2 cups minute rice

    Recipe



    Cut cooked chicken into 1-2" pieces (in the same skillet and keep in residue) Remove chicken and set aside. In same skillet add onions and saute until clear. Add peppers and celery to saute. Add tomato puree and bring to boil. Add chicken stock and bring back to boil. Add chicken and bring to boil.

    Simmer for 20 minutes. Add 1-1 1/2 cups minute rice. Simmer 10-15 minutes.
