Chicken Napoli
List of Ingredients
4 - 6 ounces boneless chicken breasts
1/2 cup sliced blanched almonds
1/4 cup sliced green olives
1/4 cup sliced red onions
1/4 sliced black olives
1/2 cup red & yellow peppers (julienne)
1/2 cup olive oil
1/4 cup chopped fresh garlic
1/4 cup chopped fresh basil
1/4 cup white wine
Salt & pepper to taste
Recipe
Grill chicken breasts and set aside. Heat oil in a large non-stick saute pan. Add almond and cook until lightly toasted. Stir in the garlic. Add all remaining ingredients except the wine. When garlic and almond turn golden, deglaze with white wine away from burner to avoid flaring.
Return to stove and cook additional 5 minutes or until vegetables are translucent.
Serve in platter with your choice of vegetables and a side of pasta topped with marinara sauce.
