Potato Chip Casserole
List of Ingredients
2 Celery Stalks, sliced
1 small onion, sliced
1 tbs butter
1 1/2 cup mayo
1 can of cream of chicken soup
1 cup frozen peas, thawed
1 tbs lemon juice
1 tsp salt
3 cups cups cooked chicken (I cheat and use boneless chicken breasts)
2 cups cooked rice
1 cup crushed potato chips
Recipe
In a small skillet, sauté celery and onion in butter until tender. Place in a bowl, add the mayo, soup, peas lemon juice and salt. Stir in the chicken and rice. Transfer to a greased baking dish. Sprinkle crushed chips on the top of the mixture. Bake, uncovered at 350 for 25 minutes or until heated through. (Note - don’t use light or fat free mayo in this recipe!)
