Quick Sweet & Sour Chicken

Serves 4
List of Ingredients
1 Medium green pepper, cut into chunks
1 large onion, cut into bite sized chucks
1-2 Tbs oil
1 can chicken broth
1/2 cup maple syrup
1/4 cup cider vinegar
1 Tbs soy sause
1 can pineapple chunks
2-3 tbs corn starch
2 1/2 cups frozen chicken nuggets (I like the southern -spicey nuggets)

In a skillet, saute pepper and onions in the oil until tender. Remove from heat and place in a bowl. Using the same skillet, add broth, syrup, vinegar and soy sause and bring to a boil. Drain pineapple (save juice). Combine cornstarch and juice, beat until all the lumps are gone and then slowely add to the sause mixture. Bring to a boi; cook and stir until thick (about 2-3 minutes). Add chicken nuggets and cook for another 2 minutes. Stir in pineapple and sauted veggies. Cook for another 2-3 minutes. Serve over rice.
