Recipe Introduction
Planning Tip: The soup can be made through Step 1 up to 2 days ahead. Just before serving, add the cream and sherry; heat and garnish.
List of Ingredients
1 Tbsp butter
1 cup chopped onion
1 can (15 oz) 100% pure pumpkin
2 cups chicken broth
1 tsp each thyme and salt
2 small bay leaves
1 cup light cream
1/4 cup dry sherry (optional)
Garnish: chopped chives Recipe
1. Melt butter in a medium saucepan. Add onion and saut� over medium-high heat 5 minutes or until translucent. Stir in pumpkin, broth, thyme, salt and bay leaves. Bring to a boil, reduce heat to low and simmer 15 minutes to develop flavors. Remove from heat; re�move bay leaves. Cover and refrigerate.
2. To serve: Bring to a simmer over medium-high heat. Add cream and sherry. Cook, stirring often, until hot. Ladle into small serving cups and garnish each with chives
