CORNMEAL BATTER FRIED CHICKEN
List of Ingredients
Cornmeal Batter Fried Chicken
1 2 1/2 to 3 pound broiler fryer chicken cut up
3/4 cup all-purpose flour
1/2 cup yellow cornmeal
1 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon poultry seasoning
1/8 teaspoon garlic powder
dash of cayenne pepper
1 egg beaten
1 cup milk or 1 1/4 cups buttermilk
2 tablespoons cooking oil
cooking oil for deep fat frying
Recipe
In large saucepan cover chicken with lightly salted water. Bring to boiling. Reduce heat, cover and simmer 20 minutes. Drain and pat dry. In a bowl combine the next seven ingredients. Stir together egg, milk and the 2 tablespoons of oil. Combine with dry ingredients. Beat until smooth. Dip chicken in to batter. Fry a few at a time until done. Drain well. Serves 6.
