    CREOLE CORN MUFFINS

    List of Ingredients





    Creole Corn Muffins

    1 1/2 cups sifted flour
    1 tablespoon baking powder
    1 teaspoon salt
    3 tablespoons sugar
    3/4 cup corn meal
    1 egg, well beaten
    1 cup milk
    1/4 cup Spry (solid vegetable shortening), melted
    1 tablespoon chopped green pepper
    1 teaspoon finely chopped onion
    1/2 cup grated cheese

    Recipe




    Sift flour with baking powder, salt and sugar; add corn meal and mix. Combine beaten egg, milk and melted Spry.

    Turn liquids into dry ingredients and stir vigorously until all flour is dampened.

    Add green pepper, onion, and cheese.

    Pour batter into muffin pans greased with Spry.

    Bake in hot oven (400°) 25 to 30 minutes.

    Makes 12.

    Crispy Creole Puffs: drop batter from spoon into deep Spry (375°) and fry until golden brown.
