SAVANNAH RED RICE

SAVANNAH RED RICE
2 (16 oz) cans whole tomatoes, undrained
6 slices bacon
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
2 cups long-grain rice, uncooked
2 tsp salt 1 tsp sugar
1/4 tsp ground black pepper
1/8 tsp hot sauce
Recipe
Place tomatoes in container of an electric blender; process until smooth, and set aside. Cook bacon in large skillet until crisp; remove bacon, reserving 1-1/2 tbs drippings in skillet. Crumble bacon and set aside. Cook onion, celery, and green pepper in bacon drippings over medium-high heat until tender; stir in pureed tomatoes, rice, and remaining
ingredients. Cook mixture over medium heat 10 minutes. Spoon into a lightly greased 3-quart baking dish. Cover and bake at 350 degrees F. for 1 hour. Yield: 8 servings.
