CAJUN GRILLED TURKEY

Cajun-Grilled Turkey
Ingredient
1 turkey breast, boneless, about 3 pounds
Dry Rub Marinade:
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried sage or thyme leaves
1 teaspoon cumin
1 teaspoon dry mustard
2 teaspoons chili powder

Preparation
1.Rinse the turkey breast. Pat dry.
2.Combine the dry rub ingredients. Rub all over turkey breast and also under the skin.
3.Let stand at room temperature while preparing the fire. Or if time allows, let turkey stand 1 hour.
4.When the coals are ready, arrange them on the sides. Place a foil drip pan in the middle. (There is not much fat in turkey breast, but it is better to catch fat rather than have it drip onto coals and cause flames.)
5.Place turkey breast over drip pan. Cover grill.
6.Cook 25 minutes. Turn turkey breast over.
7.Continue to cook another 35 minutes. You may want to add a few more briquets to each pile.
8.Cook 10 to 15 minutes longer until no pink juice runs from breast when pricked with a fork.
9.Carve and serve.
