    Recipe Introduction


    A great way to use 6 egg whites ! It's really great as a base for strawberry shortcake .


    List of Ingredients


    • 6 Large Egg Whites
    • 1 1/3 cups sugar
    • 1 cup flour
    • 1 tablespoon cornstarch
    • 1 teaspoon baking powder
    • 1 stick butter (1/2 cup) melted
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla
    • Optional : powdered sugar for dusting


    Instructions


    1. Whisk egg whites with vanilla and 2 TBS. sugar until thick , pale and foamy
    2. Measure all other ingredients and the rest of the sugar into a sifter and sift onto egg mixture .
    3. Fold dry ingredients gently into egg mixture and then fold in melted butter , again gently .
    4. Pour batter into a buttered bundt pan and bake in
      preheated 350 degree oven for 30-40 minutes

    5. Do not underbake . Test for doneness and cool slightly before turning out of the cake pan .
    6. Sprinkle with powdered sugar if desired .


    Final Comments


    I cut the flour to 3/4 cup and used 1/4 cup of King Arthur Hi-Maize Natural Fiber to add 14 grams of dietary fiber . If using this option eliminate the cornstarch .
