Muz's Salmon Croquettes - 4 Stars

Recipe Introduction
I say "thank you Muz " everytime I make this . Lanny begs for it all the time . Sauteeing the onions is what makes this recipe different .
List of Ingredients
- 1 can Salmon
- 6 Tablespoons butter for sauteeing and frying
- 1/2 onion (about 1 cup) chopped
- 1 egg
- 3/4 cup saltine cracker crumbs
- Lowry salt or salt + pepper ( 1 tsp. is about right)
Instructions
- Saute onions in 3 TBS. butter in 12inch skillet
- Pick over salmon removing black skin and round bones(bones can stay in if you wish)Add about 1tsp. Lowry salt or 3/4 tsp . salt and 1/4 tsp. pepper .
- Break salmon up with fork and add the sauteed onions stirring with fork to combine .
- Stir in half the cracker crumbs and push salmon to the side of the bowlleaving a place to break the egg and beat it with the fork until light yellow .
- Mix egg in with salmon , using fork to toss lightly until combined .
- Place a pie pan with the rest of the cracker crumbs near the salmon bowl .
- Have a 9x13 pan lined with wax paper ready to receive the patties.
- With the bowl of crumbs close by and using an ice cream scoop leveled with the salmon mixture in your right hand release salmon into left hand full of crumbs and form patties over the crumb bowl .
- Do not put patty in the dish of crumbs or it will fall apart .
- Using same pan that onions were in melt the other 3 TBS. butter and fry patties on medium heat .
- Don't turn patties too soon . Wait until one side is very brown . Make 6
Final Comments
It is time consuming and messy but well worth it . I usuually double the recipe and either freeze some or refrigerate for another day .
