Recipe Introduction
Taking a page from Mom's Coney Island barbecue I added carrots . This is a sweet version that's so popular with the kids . They don't even know the carrots are in there so this is a good way for them to get their vegetables .
List of Ingredients
3 pound beef roast cut in 4 or 5 pieces
1 large onion minced {I use the
2 cups carrots minced food processor }
2 cups catsup
1/2 cup sweet pickle relish
1 tablespoon yellow mustard
2 tablespoons worcestershire sauce
1/3 cup cider vinegar or lemon juice
1/2 cup bottled barbecue sauce ( prefer Kraft Honey )
1/2 cup sugar plus 2 tablespoons
1/2 cup water
1 teaspoon salt
1/2 teaspoon pepper
Recipe
Roast meat with onions and carrots in heavy dutch oven at 325 degrees until it falls apart (2-3hrs ) . If it looks dry after 1hr. hour add a little water (cup or less ) . Remove bones , fat and cartilage , skim grease and shred with 2 forks . While meat is cooking mix sauce ingredients in a 2 quart pan . Boil mixture until it shines and thickens (about 15min. ) . Add sauce to meat and simmer on stove top 30min.-1hr. stirring often .Adjust seasoning and serve on fresh buns with cole slaw or relish .
