    Old Coney Beef Barbecue

    Source of Recipe

    Mother's friend , Mary Paolucci

    Recipe Introduction

    The family outings to Coney Island were highlighted by mother's thermos of "barbecue" on bakery buns with sweet pickle relish . The only thing that could lure us away from the rides was our hunger pangs and the thought of that barbecue !

    List of Ingredients

    3 lb. beef roast- chuck,shoulder or whatever's on sale
    1 large onion finely chopped or ground {mom used her
    2 cups carrots finely chopped or ground food grinder}
    salt and pepper to taste
    1 cup water
    2 tablespoons flour

    Recipe

    Put roast in heavy dutch oven with carrots and onions and roast in 325 oven until meat falls apart (2-3 hrs) .If it looks dry after an hour add a little water (cup or less). Remove bones , fat and cartilage, skim off grease and shred meat with 2 forks . Shake up water and flour to make a paste and add to meat to thicken juices .Cook on medium heat on stovetop to thicken gravy . Salt and pepper to taste ( about 1 tsp. salt and 1/4 tsp. pepper to start) . Serve on fresh buns with relish .
