For a fast,easy and delicious gray day belly warmer this can't be beat !
List of Ingredients
- 1 Store bought rotisserie chicken
- or 2 cups cubed cooked chicken
- 5-6 cups of chicken broth or 3 (14oz.) cans of broth
- 1 pound frozen mixed vegetables
- 2-3 tablespoons freeze dried onions
- 1 cup milk ( any kind or soy)
- 1 tablespoon flour (optional)
- Salt and white pepper to taste
Instructions
- Cut up chicken from leftover rotisserie chicken or other cooked chicken .
- Bring broth to boil in a 4-6 qt. stockpot or dutch oven and add frozen vegetables cooking for a few minutes 'til tender .
- Sprinkle in freeze dried onions .
- Stir flour into milk if you desire slight thickening .
- Lower heat and add chicken and milk . Cook on low heat for 10 minutes adding salt and pepper to taste .
Final Comments
I like to buy a rotisserie chicken and use it for a meal or 2 before cutting up the leftover meat minus skin for this soup . I cover the bones with water and 1 TBS. vinegar (no taste or odor will be noticed but bone marrow will be extracted from the bones)and 1 TBS. salt bringing to a boil and simmering for 2-3 hours . This is a great comfort food with crackers or toast and a one-dish meal ! Good leftover or frozen .
