    Yield: 4 to 5 servings
    Olive oil 2 tsp.
    Large onion, diced 1
    Garlic cloves, minced 4
    Carrots, peeled, cut in 1/2-in. chunks 2
    Boneless skinned chicken breast, cut in 1/2-in. chunks 6 oz.
    Curry powder 1 tsp.
    Ground ginger 1 tsp.
    Ground cinnamon 1/4 tsp.
    Salt 1/4 tsp.
    Cayenne pepper 1/8 tsp.
    Ground allspice 1/8 tsp.
    Cracked black pepper 1/8 tsp.
    Yellow squash, sliced on bias 1
    Zucchini, sliced on bias 1
    Water or chicken stock 1/2 cup
    Instant couscous 2/3 cup
    Fresh cilantro, chopped 1/4 cup


    Recipe



    1. In large skillet, heat oil until smoking. Add onion and garlic; sauté, stirring frequently, until onion is soft, about 7 to 8 minutes.
    2. Add carrots and cook, stirring, until carrots are well coated, about 2 to 3 minutes. Add chicken and cook 2 to 3 minutes. Stir in curry powder, ginger, cinnamon, salt, cayenne pepper, allspice and black pepper; cook about 1 minute until fragrant.
    3. Stir in yellow squash and zucchini; cook 1 to 2 minutes. Add water and couscous; stir until liquid is absorbed, about 5 minutes. Stir in cilantro. Portion and serve immediately
