Smoke wtih Hickory Wood
Salt & Pepper real good especially on fat side.
Don't cover pan.
Fill flat 2" high pan with 1/4" Water to smoke at 250 degrees for 8 hours.
If still not tender wrap with foil to finish in the oven. Leave fat on when cooking. Fat does the seasoning. Bake in the over at 250 to 350 degrees for 1 hour to 1 1/2 hour.
To cook brisket faster. Cook 3 to 4 hours on smoker at 250 to
350 degrees. Then put in over wrapped in foil.Recipe
