    Fried Rice

    This is a main dish fried rice


    List of Ingredients


    • 4 slices of bacon cut into small pieces
    • 1 small onion diced
    • 2 ribs of celery diced
    • 1 small can of mushrooms
    • 2 boneless, skinless chicken breast halves (chopped ) or you can substitute diced ham
    • 2 eggs scrambled
    • 3 cups of cooled cooked rice, medium or long grain (not minute type)
    • One quarter cup of soy sauce
    • One half teaspoon powdered ginger
    • One clove garlic minced
    • Green Onions for garnish


    Instructions


    1. Cook rice according to directions, put aside to cool.
      In small cup combine soy sauce, ginger and garlic
    2. Meanwhile scramble eggs and put aside. Next in a large skillet place bacon slices and cook to your preference,
      remove from heat and drain. In same skillet saute, onions and celery until tender add mushrooms cook 30 seconds more.
    3. Remove vegetables and add chicken cook until no longer pink. Now return vegetables, eggs, bacon, rice and soy mixture to pan. Combine well.Cook 1 to 2 minutes to reheat rice. Serve on plate, top with green onions.

    4. Makes 6 servings


    Final Comments


    You can also add peas and carrots if you like.
