Mexican Confetti Rice
List of Ingredients
- 1 red chile pepper minced
- 1 serrano chile minced
- One quarter cup finely chopped onion
- 2 cups boiling chicken broth
- 2 cups minute rice
- 2 tablespoons minced cilantro
- 1 tablespoon olive oil
Instructions
- Heat broth to boiling, set aside. In a medium saucepan saute peppers and onion in olive oil until onion is translucent. Pour hot broth over pepper mixture and return to boil. Add minute rice, stir ,cover and remove from heat. let stand 5 minutes. Stir and add cilantro. Serves 4
