    Sour Pickles

    List of Ingredients


    • 1 cup pickling vinegar
    • 2 cups water
    • 3 tbsp picking salt
    • 1 clove garlic (more if you lke garlic)
    • 1 slice onion or 3-4 silver skin onions
    • 1 sprig dill
    • pickling cucumbers to fill quart sealer


    Instructions


    1. Put dill, garlic, onion and cucumbers into a 1 quart sealer.

    2. Bring salt, water and vinegar to a boil.

    3. Put brine into sealer to within 1/2" of the top. (NO HIGHER - expansion space)

    4. Snug lid down (not tighten) & put into a canner of already boiling water & bring to a boil again.

    5. When boiling, remove the sealers from the canner and set on the counter until the lids pop.



    Final Comments


    When the sealers are cool it is preferable to store them in a cool dark place. They are not ready to eat for about a month. NOTE: The brine recipe is not the amount reqired for 1 qt but is the ratio.
