Chicken Tacos

Recipe Introduction
This is a good place to start for a mexican style dinner. You will notice that there are no quantities. That's because you can make this for one person or many people.
List of Ingredients
- Chicken breast, cooked and cubed
- Salsa
- Tomato, chopped
- Onion, chopped
- Cilantro, chopped
- Cheese, grated
- Tortillas, I prefer corn
- Sour cream
- Avocado (or guacamole)
Instructions
- Heat a skillet over medium heat with a little cooking spray. Add the salsa and cook for just about a minute. You're going to need enough salsa to just coat the chicken.
- Add the cubed chicken and cook for about 10 minutes. If the liquid in the salsa looks like it is cooking off too fast, add some tomato juice, broth or even just a little water. You need to cook long enough for the chicken to be heated through.
- The rest of the ingredients are for topping the tacos. Heat the tortillas either in the microwave or by heating up in a dry skillet or over the open flame of a gas stove.
- I usually set out bowls with each of the toppings so that each person can put their favorite toppings on their taco.
