    Norwegian Sour Cream Heart Waffles

    Recipe Introduction


    Good enough for dessert. Freeze and extras and toast lightly in the toaster. I like them with a little bit of fruit preserves rather than with syrup.


    List of Ingredients


    • 5 egg
    • 1/3 c. sugar
    • 1 c. flour, sift
    • 1 t. ground cardamon (use fresh cardamon, see below)
    • 1 c. sour cream
    • 4 T. butter - use unsalted butter, melted


    Instructions


    1. Beat eggs and sugar together for 5-10 minutes. The mixture should be light colored and airy.
    2. Gently fold in half of the flour mixed with the cardamon and sour cream.
    3. Add the other half of the flour and mix very lightly.
    4. Add the melted butter and fold together. Try to keep the mixing to a minimum so the waffles will be delicate and tender.
    5. Set aside for 10 minutes - I put in the fridge.
    6. Bake in a hot, greased waffle iron until done.

    7. The waffles should sizzle when the batter hits the iron. Steam will escape from the sides of the iron while it is cooking. When the steam slows down, the waffles are done.
    8. Note on cardamon: I use the whole cardamon. The seed pod contains several small hard seeds. Remove the husk seed pod and discard. Grind the seeds with a mortar and pestle or grinder. Fresh cardamon is totally different from the commercial ground cardamon which loses its flavor quickly.


    Final Comments


    Heart Wafflers are available at a lot of sources. Norwegian wafflers can be quite expensive but I've found Italian and American ones for $20 - $35.
