    1 c. sugar
    1 (8 ounce) can crushed pineapple
    8 eggs
    2 (13 ounce) cans evaporated milk
    2 t. vanilla or 1 T Rum

    Recipe



    Carmelize 1/2 c. sugar. Pour into baking pan to coat bottom evenly. Drain pineapple thoroughly and place over caramel.

    Beat together eggs, evaporated milk,1/2 c. sugar and vanilla. Strain into pan. Place over water in a bain marie with the water 2/3's of the way to the top. Bake at 350 degrees for 1 hour 10 to 20 minutes.

    ORANGE FLAN: Substitute 3 1/3 c. orange juice for evaporated milk. Add 1 t. grated orange peel and 2 extra egg yolks. Bake 1 hour and 30 - 40 minutes.

    COCOA FLAN: Add 1/4 c. unsweetened cocoa with the milk mixture. Bake 1 hour 10 - 20 minutes.

    I think I usually use non-fat evap. milk and substitute some egg beaters for the egg yolks.
