Mom's Potato Salad

List of Ingredients
5-6 large White Rose potatoes, peeled. Russets - mushier
1 red apple (mom-red delicious; Linda - fuji or gala
1/2 cucumber
1 dill pickle, minced (or use couple of spoons of dill relish)
1/2 small onion, minced
1 small carrot, peeled and grated
1 stalk celery, chopped
1 T. yellow mustard
1-1 1/2 T. vinegar
mayonnaise (preferably Best Foods), to taste
salt and pepper, to taste
Recipe
Quarter the potatoes and boil for 15 minutes until fork tender. When cool, cut into bite sized pieces. Cut apple into similar bite sized pieces, do not peel. Peel cucumber partially into zebra stripes. Cut cucumber horizontally in half and slice very thinly. Mix apple and vegetables together with mustard, vinegar, salt/pepper, and mayo. Add enough mayo to suit your texture preference.
