7 cups red potatoes, rinsed and cubed
1½ cups Vidalia onion, sliced
1 tablespoon garlic, minced
2 teaspoons Herbes de Provence
1 teaspoon extra virgin olive oil
1 teaspoon paprika

Preheat oven to 350. Mix all ingredients well in pan, cover and bake for 45 minutes. Stir, cover and bake for another 30-40 minutes, or longer if you like it crispy.
