    List of Ingredients




    2 cups penne pasta, cooked
    ¼ cup onion, diced
    1 tablespoon garlic, minced
    1 teaspoon extra virgin olive oil
    1 cup Roma tomatoes, diced
    ¼ cup balsamic vinegar
    1 teaspoon oregano
    1 teaspoon fresh basil
    1 teaspoon honey
    ½ teaspoon black pepper
    ¼ cup water
    ½ cup texturized vegetable protein (TVP)
    1 tablespoon tomato puree, no salt added

    Recipe



    Cook pasta according to directions on package. In a large saucepan over low-medium flame, sauté onions and garlic in olive oil until lightly browned. Add Roma tomatoes, increase to medium-low flame and cook for 1 minute. Add vinegar, cook for an additional minute, then mix in spices and honey. Cover and cook 2-3 more minutes. Mix in water, then TVP. Cover for two minutes. Stir in tomato puree, then add pasta and mix well. Serve immediately.

    YIELD: 6 servings
