White Butter Cake

- 3 cups flour
- 1 1/2 cups granulated sugar
- 1 tablespoon plus 1 teaspoon baking power
- 3/4 teaspoon salt
- 6 egg yolks
- 1 cup milk
- 2 1/2 teaspoons vanilla extrat
- 3/4 cup unsalted butter; at room temp.
Instructions
- Preheat oven to 350. Butter and flour a 9-cup Bundt pan. To prepare the cake, in a bowl, sift together the flour, sugar, baking powder and salt. In another bowl, mix together the egg yolks, 1/2 cup milk, and the vanilla until blended. Add the butter and the remaining 1/2 cup milk to the dry mixture and, using an electric mixer on medium-low speed, beat for about 3 minutes until a smooth meal forms. Scrape down the sides of the bowl. Slowly add the yolk mixture to the flour mixture in 3 batches, making sure to scrape down the sides of the bowl after each addition.
- Pour into the prepared Bundt pan and bake for 45 to 50 minutes, until the cake springs back to the touch. Invert the cake onto a rack immediately and allow to cool. Using a serrated knife, cut the cake horizontally into 2 layers.
